We sat down with Adam Duron, Catering Manager at Truffles, to discuss how Victoria’s leading caterer blends high-end culinary experiences with a generational dedication to their community and a groundbreaking commitment to the planet.

Adam, so you’re relatively new to the Truffles team. Joining a local icon like Truffles, what has surprised you most about the company culture?

The culture is one where everyone focuses on the guest experience from A-Z. Details are crucial and they have layers of safety nets to ensure details are all there. It is also a culture of support, everyone will jump into any job to give a hand if needed.

What are some highlights from your first year?

The quality even with the volume of events. The sheer diversity of what they can accomplish.

Truffles’ history on Vancouver Island started back all the way back in 1992. Can you speak on the impressive staying power of Truffles?

The team, the commitment and the drive to create and evolve in all areas, new menus, new styles, constant steady improvement and consistency in all areas are key pillars.

We know sustainable and ethically sourced ingredients has always been a priority for your team. Then I read that you’re the first catering company in North America to be Biosphere Certified, congrats! Can you share more about Truffles’ food philosophy, this certification, and how it all affects your clients, community, and menus?

This goes back to constant steady improvement in all areas. Every business has limited resources and needs to decide where to allocate those to. Truffles believes in sustainability and has for decades, gaining the Biosphere certification was the next step we chose to take.

Are there a few suppliers you’d like to share with our readers? Maybe some long-time partners and exciting new additions?

In the event work there are many vendors we work with in many different ways, food, beverages, equipment, planners etc. The Victoria market has matured and evolved from when Truffles first began and so has the quality both of products available and professionalism of those individuals and businesses. Local food producers, local wineries and other beverage providers are a key starting point for us.

Are there any ingredients or dishes that are currently at the top of your favourites list? Anything seasonal people might expect to see at your events over the winter?

Wow, where to start. Our menus are always evolving, we create menus from scratch and test everything before it goes on our menus so chef creativity is constant. Each canape is unique to us, each chef action station is unique to us and having our own pastry department means even all our desserts and treats are unique to us. Here are a few:

Crab & Spring Pea Flan (gf) – Dungeness crab, spring pea mousse, gruyère

Brome Lake Duck Breast – House made confit duck and potato pierogi, baby summer squash, spiced carrots, stone fruit jus

Chocolate Crémeux (v) – Rich, silky and decadent chocolate pâté, white chocolate cream, almond praline, house made banana gelato

At Brand Royalty, you were instrumental in us achieving a cocktail party vibe over a stuffy trade show. How does your team approach a more dynamic, social event like this? And how does it compare to a typical luxury “sit down” gala?

Both are very different experiences, with an event like Brand Royalty you can only showcase a tiny amount of what you can offer and so our team on the stand are there to fill in “the gaps”. At a gala then we let the food, presentation and service do the talking.

Are there any events or menus you’re excited for over the holidays or into the new year?

We are looking forward to continued evolution in our menus and offerings. New menus are being written right now for the new year and the team is excited about both continued evolution and consistency.

What advice would you give to someone looking to hire a caterer for their next luxury event?

Know what matters most to you. Is it the food, the presentation, the service, the sustainability credentials? Understanding your priorities helps find the right partner for your vision.
